My friend JaNee' gave me this recipe... easy to make, and so good on cold days.
1/2 cube margarine
3 cups water
1 tsp salt
2 cups chicken broth
4-5 potatoes, peeled and chopped
1 onion, chopped (I use dried onion)
1 bag frozen broccoli, carrots and cauliflower
1 can cream of celery soup
1 small container half & half (I use milk)
1 cup shredded Monterrey Jack cheese
Pepper
In a large pot, melt margarine.  Add water, salt and chicken broth.  Add vegetables and simmer over medium-low heat.  When vegetables are cooked to your liking, add soup, half & half and cheese.  Add pepper to taste.
This sounds delicious! And perfect for a fast & easy cold day! I think I'll make it tonight.
